  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix softened butter, minced garlic, and chopped parsley until well combined. Set aside.
  3. Season chicken breasts on both sides with salt, pepper, and garlic powder.
  4. Heat olive oil in a small skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden brown and cooked through (internal temperature of 165°F). Let rest for 5 minutes, then slice into thin strips or bite-sized pieces.
  5. Slice the Italian bread loaf in half lengthwise. Place cut-side up on the prepared baking sheet. Spread garlic butter mixture evenly over both halves.
  6. Bake for 5-7 minutes until edges are just starting to turn golden and butter is melted.
  7. Remove from oven. Spoon Alfredo sauce evenly over both bread halves. Arrange sliced chicken on top. Sprinkle mozzarella evenly over chicken, followed by Parmesan. Add red pepper flakes if using.
  8. Return to oven and bake for 12-15 minutes until cheese is melted, bubbly, and starting to turn golden brown. For extra browning, broil for 1-2 minutes at the end, watching closely.
