  • 1 cup (about 180g) marshmallow fluff
  • 1½ cups (180g) powdered sugar
  • ½ teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together 2 cups all-purpose flour, ½ cup cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt until evenly combined.
  3. In a large bowl, beat ½ cup softened unsalted butter with ¾ cup granulated sugar until light and fluffy, about 3 minutes with a hand mixer on medium speed.
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until fully incorporated. Scrape down the sides of the bowl.
  5. With the mixer on low speed, add about one-third of the flour mixture, then half of the 1 cup buttermilk. Repeat, ending with the last third of the flour mixture. Mix just until combined.
  6. Using a 1.5-tablespoon cookie scoop, drop rounded mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart. You should get about 24 cookies (12 pies).
  7. Bake for 9-11 minutes. The cookies should look puffed and set around the edges, but still soft in the center. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. While the cookies cool, make the filling: Beat ½ cup softened unsalted butter until creamy. Add 1 cup marshmallow fluff and ½ teaspoon vanilla extract, beating until smooth. Gradually add 1½ cups powdered sugar, beating on low speed until incorporated, then increase to medium for 1 minute until light and fluffy.
  9. Pair up cookies of similar size. Spread or pipe about 1-2 tablespoons of filling onto the flat side of one cookie, then top with the matching cookie. Gently press down until the filling reaches the edges.

Notes

Chill the dough for 15 minutes if your kitchen is warm to prevent spreading. For a peanut butter filling, swap half the marshmallow fluff for creamy peanut butter. These pies taste even better the next day as the flavors meld together.
