Instructions

  1. Preheat your oven to 325ยฐF (163ยฐC). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine 3 cups rolled oats, 1 teaspoon cinnamon, and ยฝ teaspoon salt. Stir with a spatula.
  3. In a small saucepan over low heat, combine ยฝ cup peanut butter, โ…“ cup honey, and ยผ cup coconut oil. Stir constantly until smooth and fully combined (about 2 minutes). Do not let it boil. Remove from heat and stir in 1 teaspoon vanilla extract.

  8. Bake for 20-22 minutes: 10 minutes, then rotate the pan, then bake another 10-12 minutes until the edges are deep golden brown. The center will still look slightly soft.
  9. Cool completely on the baking sheet without stirring for at least 1 hour.

The egg white is the secret to big clusters. Press the mixture firmly before baking. Let cool completely without stirring. Store in an airtight container at room temperature for up to 2 weeks. Do not refrigerate.
