  • 1/4 cup tequila (silver or blanco)
  • 1/4 cup fresh lime juice (about 23 limes)
  • 2 tablespoons olive oil (extra virgin)
  • 2 tablespoons honey (or agave nectar)
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt (kosher salt preferred)
  • 1/4 teaspoon black pepper
  • Zest of 1 lime
  • 1 1/2 pounds large shrimp (2125 count, peeled and deveined)
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)
  • Optional: Lime wedges and fresh cilantro for garnish

Instructions

  1. Make the marinade: In a medium bowl, whisk together tequila, lime juice, olive oil, honey, minced garlic, chili powder, cumin, salt, pepper, and lime zest. Taste and adjust sweetness if needed.
  2. Prepare the shrimp: If frozen, thaw under cold running water for about 5 minutes. Pat completely dry with paper towels.
  3. Marinate: Place shrimp in a large zip-top bag or bowl. Pour marinade over shrimp, reserving about 2 tablespoons for basting. Seal and refrigerate for 15-20 minutes (no longer than 30 minutes).
  4. Preheat grill to medium-high heat (about 400-450°F). Clean and oil the grates lightly.
  5. Skewer the shrimp: Thread shrimp onto skewers, leaving a little space between each. Use 5-6 shrimp per skewer.
  6. Grill: Place skewers on hot grill. Cook for 2-3 minutes per side until shrimp are pink and opaque. Brush reserved marinade onto shrimp during the last minute of cooking.
  7. Rest and serve: Remove from grill and let rest for 2 minutes. Squeeze fresh lime juice over top and sprinkle with cilantro if desired. Serve immediately.

Notes

Don’t marinate longer than 30 minutes or the lime juice will make the shrimp mushy. Pat shrimp dry before marinating for best char. Use two parallel skewers per row to prevent shrimp from spinning. Reserve clean marinade for basting to avoid cross-contamination.
