Bright and Zesty Lemon Poppy Seed Bread

A quick and easy lemon poppy seed bread with a tender, moist crumb, bright lemon flavor, and a crunchy poppy seed texture, finished with an optional glossy lemon glaze.

  • 2 cups (240g) all-purpose flour
  • 1 ยฝ tsp baking powder
  • ยฝ tsp baking soda
  • ยฝ tsp salt
  • 1 cup (200g) granulated sugar
  • ยฝ cup (113g) unsalted butter, softened
  • 2 large eggs, room temperature
  • ยฝ cup (120ml) sour cream
  • 2 tbsp fresh lemon zest (from about 2 medium lemons)
  • ยผ cup (60ml) fresh lemon juice
  • 2 tbsp poppy seeds
  • Optional glaze: 1 cup (120g) powdered sugar
  • Optional glaze: 2-3 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan thoroughly with butter or non-stick spray and dust lightly with flour.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 minutes with an electric mixer on medium speed.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Mix in the sour cream, fresh lemon zest, and lemon juice until smooth.
  6. Gently fold the dry ingredients into the wet ingredients using a spatula, stopping as soon as no streaks of flour remain.
  7. Fold in the poppy seeds evenly through the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 50-60 minutes, checking doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs. Tent with foil if the top browns too quickly.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. For the optional glaze, stir together powdered sugar and lemon juice until smooth and pourable, then drizzle over the cooled bread.
