These no-bake cherry sugar bites are a quick and easy 5-ingredient sweet snack with a perfect balance of cherry sweetness and a tender, melt-in-your-mouth texture. Ideal for a last-minute treat or casual snack.

Ingredients

Scale
  • 1 cup fresh or frozen cherries, pitted and finely chopped
  • ½ cup granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract

Instructions

  1. Pit and finely chop about 1 cup of fresh or thawed frozen cherries.
  2. In a large bowl, whisk together 1 cup all-purpose flour and ½ cup granulated sugar until no lumps remain.
  3. In a separate bowl, soften 2 tablespoons unsalted butter and mix in 1 teaspoon vanilla extract.
  4. Add the butter and vanilla mixture into the dry ingredients and stir gently with a wooden spoon until crumbly but starting to come together.
  5. Fold in the finely chopped cherries carefully, ensuring even distribution without overmixing.
  6. Using your hands or a small cookie scoop, form bite-sized balls about 1-inch in diameter and place them on a baking sheet lined with parchment paper or a silicone mat.
  7. Roll each ball lightly in granulated sugar to coat.
  8. Refrigerate the tray for at least 30 minutes to firm up the bites and meld flavors.
  9. Serve chilled or at room temperature.

Notes

If the dough is too sticky, add a teaspoon of flour at a time until manageable. Do not skip chilling as it helps the bites hold their shape and improves texture. Soft but not melted butter is key to proper dough consistency. For gluten-free, substitute flour with almond or oat flour. For dairy-free, use coconut oil instead of butter.
