Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together 2 ยฝ cups (312g) all-purpose flour, 1 tsp baking powder, and ยฝ tsp salt. Set aside.
  3. In a large bowl, beat ยพ cup (170g) softened unsalted butter with 1 cup (200g) granulated sugar and ยฝ cup (110g) light brown sugar using an electric mixer on medium speed until fluffy and pale, about 3-4 minutes.
  4. Beat in 2 large eggs, one at a time, then mix in 2 tsp vanilla extract. Do not overmix.

  11. Use a butter knife or small spatula to spread icing on each cooled cookie. For a marbled effect, layer or swirl colors.
