  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 2 large eggs, at room temperature
  • 1 ½ teaspoons almond extract
  • ¾ cup chopped candied cherries (mix of green and red)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, cocoa powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3 to 4 minutes on medium speed.
  4. Beat in the eggs one at a time, then mix in the almond extract until the dough is creamy and smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until incorporated. Avoid overmixing.
  6. Gently fold in the chopped candied cherries and nuts (if using) with a rubber spatula, ensuring even distribution without smashing the cherries.
  7. Use a medium cookie scoop or two spoons to drop 1 ½ tablespoon-sized mounds about 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes or until the edges are set but centers still look slightly soft. They will firm up as they cool.
  9. Let cookies sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Do not overmix the dough to keep cookies chewy. Use room temperature eggs and butter for better texture. If dough is sticky, chill for 15 minutes before scooping. Underbake slightly for soft centers. Store in airtight container with a slice of bread to keep soft longer. Dough can be refrigerated up to 24 hours before baking. Vanilla extract can substitute almond extract but will alter flavor. Gluten-free flour blend can be used for gluten-free version.
