A warm, comforting breakfast that combines the flavors of an almond croissant with the ease of baked oats. Ready in under 30 minutes, this recipe features a tender, custard-like texture with a crunchy almond topping.

  • 1 cup (90g) rolled oats
  • ¾ cup (180ml) unsweetened almond milk
  • 1 large egg
  • 2 tablespoons (30g) smooth natural almond butter
  • 2 tablespoons (30ml) maple syrup
  • ½ teaspoon almond extract
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons (15g) sliced almonds
  • Optional: powdered sugar for dusting
  • For the almond paste swirl: 1 tablespoon almond butter and 1 teaspoon maple syrup

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grind half a cup (45g) of rolled oats in a blender or food processor until fine and powdery (about 15-20 seconds).
  3. In a mixing bowl, combine the oat flour with the remaining half cup of whole rolled oats, baking powder, and salt. Whisk briefly.
  4. In a separate bowl, whisk together almond milk, egg, 1 tablespoon maple syrup, almond extract, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
  6. In a tiny bowl, mix together 1 tablespoon almond butter and 1 teaspoon maple syrup to make the almond paste swirl. If too stiff, microwave for 5 seconds.
  7. Lightly grease two 6-ounce ramekins or one 8-inch baking dish with coconut oil or butter. Divide the oat batter evenly between the ramekins.
  8. Drop small spoonfuls of the almond paste mixture on top of the batter and swirl gently with a toothpick or knife. Do not over-swirl.
  9. Sprinkle sliced almonds evenly over the top.
  10. Place ramekins on a baking sheet and bake for 18-22 minutes, until tops are golden brown and center is set but still slightly soft.
  11. Let cool on a wire rack for 5 minutes before serving. Dust with powdered sugar if desired.

Notes

Do not skip blending half the oats into flour for the best texture. Start checking for doneness at 18 minutes. Let ramekins cool for 5 minutes before serving to allow the oats to set. Use room temperature ingredients for even mixing.
