  • 4 tablespoons (60g) unsalted butter, melted (for cobbler topping)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. In a medium bowl, mash 3 ripe bananas until mostly smooth but still a bit chunky. Stir in 1 cup sugar and 1/3 cup melted butter until combined.
  3. Add 1 large room-temperature egg and 1 teaspoon vanilla extract. Mix well until the batter is smooth and glossy.
  4. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/4 teaspoon salt, and 1/2 teaspoon cinnamon (if using).
  5. Slowly fold the dry ingredients into the banana mixture using a spatula, mixing just until no flour streaks remain.
  6. Pour the batter evenly into the prepared baking dish, smoothing the top gently with a spatula.
  7. In a small bowl, stir together 1/2 cup sugar, 1/2 cup flour, 1 teaspoon baking powder, and 1/4 teaspoon salt.
  8. Pour in 6 tablespoons milk and 4 tablespoons melted butter. Stir until the mixture is just combined and slightly lumpy.
  9. Drop spoonfuls of the cobbler topping over the banana bread batter. The topping will spread as it bakes.
  10. Bake for 40-45 minutes, or until the topping is golden and a toothpick inserted into the center comes out clean or with moist crumbs.
  11. Cool slightly on a wire rack for 10 minutes before serving.

Notes

If the topping browns too fast, loosely tent the dish with foil halfway through baking. For a more caramelized edge, bake in a cast-iron skillet. Do not overmix the batter to keep it light.
