Instructions

  1. Brown the butter: Melt 1/2 cup unsalted butter in a small saucepan over medium heat, stirring constantly until it foams, turns golden brown, and releases a nutty aroma. Remove from heat and let cool slightly.
  2. Prepare the zucchini: Grate 1 medium zucchini and squeeze out excess moisture using a clean kitchen towel. Set aside.
  3. Mix wet ingredients: In a large bowl, mash the bananas until mostly smooth. Add sugar and whisk together. Beat in eggs and vanilla extract. Slowly stir in the cooled brown butter until combined.
  4. Combine dry ingredients: In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Mix batter: Gradually fold dry ingredients into wet mixture using a spatula until just combined. Fold in grated zucchini and optional add-ins if using. Do not overmix.
  6. Prepare pan and bake: Preheat oven to 350Β°F (175Β°C). Grease a 9×5 inch loaf pan or line with parchment paper. Pour batter evenly into pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if top browns too quickly after 40 minutes.
