Cozy Classic Apple Carrot Ginger Soup

A comforting and easy homemade soup blending the natural sweetness of apples and carrots with the warming zing of fresh ginger. Perfect for cozy evenings and quick weeknight meals.

  • 6 medium carrots, peeled and roughly chopped
  • 2 medium sweet-tart apples (Fuji or Gala), peeled, cored, and chopped
  • 1-inch piece fresh ginger, peeled and grated
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups (950 ml) vegetable broth, low-sodium recommended
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • 1 tablespoon fresh lemon juice
  • Optional garnish: fresh chopped parsley or a dollop of plain yogurt

Instructions

  1. Peel and chop 6 medium carrots and 2 apples into roughly 1-inch pieces. Dice 1 medium yellow onion and mince 2 garlic cloves. Grate a 1-inch piece of fresh ginger. This prep should take about 10 minutes.
  2. Heat 2 tablespoons olive oil in a large pot over medium heat. Add the diced onion and cook for 4–5 minutes until translucent and slightly golden. Stir in the minced garlic and grated ginger, cooking for another 1–2 minutes until fragrant but not browned.
  3. Add the chopped carrots and apples, stirring to coat them with the aromatic mixture. Cook for about 3 minutes, letting the natural sugars start to caramelize lightly.
  4. Sprinkle 1/2 teaspoon ground cinnamon, and season with a pinch of salt and pepper. Pour in 4 cups (950 ml) of vegetable broth and stir well. Increase heat to bring the mixture to a gentle boil.
  5. Once boiling, reduce to a simmer and cover the pot. Let it cook for 20–25 minutes, or until the carrots are very tender when poked with a fork.
  6. Remove the pot from heat. Using a hand blender, puree the soup until smooth and creamy. If using a countertop blender, carefully ladle the soup in batches, venting the lid for steam.
  7. Stir in 1 tablespoon fresh lemon juice to brighten the flavors. Taste and add more salt or pepper if needed. If the soup is too thick, thin it out with a splash of broth or water.
  8. Ladle into bowls and garnish with chopped parsley or a dollop of plain yogurt if desired. Serve warm.

Notes

Add ginger towards the end of sautéing onions to avoid bitterness. Blend soup in batches if using a countertop blender and vent the lid to avoid steam burns. Soup tastes better after resting 10 minutes post-blending. Adjust seasoning gradually to balance sweetness and spice. Optional variations include adding cayenne for spice, coconut milk for creaminess, or swapping apples for pears or sweet potato.
