  • 1 pound fresh salmon fillets, skin removed and cut into bite-sized chunks
  • 3 medium Yukon Gold potatoes, peeled and diced into 1-inch cubes
  • 3 tablespoons unsalted butter
  • 1 large leek, cleaned and sliced thinly (white and light green parts only)
  • 2 medium carrots, peeled and chopped
  • 4 cups fish stock or vegetable broth
  • 1 bay leaf
  • 1 cup heavy cream or half-and-half (use coconut cream for dairy-free version)
  • 3 tablespoons fresh dill, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: splash of lemon juice for brightness before serving

Instructions

  1. Peel and dice the potatoes into 1-inch cubes. Slice the leek thinly and chop the carrots into small pieces. Rinse leeks thoroughly to remove dirt.
  2. In a large pot over medium heat, melt the butter until foamy. Add the leeks and carrots and cook gently for about 5 minutes until softened but not browned.
  3. Pour in the fish stock or vegetable broth. Add the diced potatoes and bay leaf. Bring to a gentle boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
  4. Cut the salmon into bite-sized chunks. Add the salmon to the pot and simmer for 5-7 minutes until cooked through and flakes easily.
  5. Stir in the heavy cream and fresh dill. Heat gently for 2-3 minutes without boiling to prevent curdling.
  6. Remove the bay leaf. Season with salt and freshly ground black pepper to taste. Add a splash of lemon juice if desired. Ladle into bowls and garnish with extra dill.

Keep heat moderate when cooking leeks and carrots to avoid browning. Do not boil soup after adding cream to prevent curdling. Use fresh salmon for best flavor and texture. If soup is too thick, add a splash of water or broth to loosen. Fresh dill is essential for authentic flavor.
