A deeply comforting, hands-off slow cooker soup made with black rice, tender chicken, and aromatic vegetables. It’s a nourishing, pantry-friendly meal that tastes like a hug in a bowl.

  • 1 ½ pounds boneless, skinless chicken thighs
  • 1 cup black rice, rinsed
  • 6 cups low-sodium chicken broth
  • 2 cups water
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon black pepper
  • 1 teaspoon salt (plus more to taste)
  • 2 bay leaves
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh parsley, chopped
  • Parmesan rind (optional)

Instructions

  1. Prep your vegetables (5 minutes): Dice the onion, carrots, and celery into roughly equal-sized pieces. Mince the garlic.
  2. Rinse the black rice (1 minute): Place the rice in a fine-mesh strainer and rinse under cold water until the water runs clear.
  3. Layer ingredients in the crockpot (5 minutes): Start with the vegetables and garlic on the bottom. Place the chicken thighs on top. Sprinkle the rinsed rice over everything. Add the thyme, rosemary, pepper, salt, and bay leaves. If using a Parmesan rind, nestle it in now.
  4. Add the liquid (1 minute): Pour in the chicken broth and water. Do not stir.
  5. Cook low and slow (6-8 hours on low, or 3-4 hours on high): Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  6. Shred the chicken (5 minutes): After cooking, remove the chicken thighs to a cutting board. Use two forks to shred the meat. Discard any bones if using bone-in thighs. Remove the bay leaves and Parmesan rind if used.
  7. Return the chicken to the pot (1 minute): Stir the shredded chicken back into the soup. Taste and adjust seasoning.
  8. Add the finishing touches (2 minutes): Stir in the fresh lemon juice and parsley just before serving.

Notes

For a thicker soup, mash about ½ cup of cooked rice against the side of the pot before adding the chicken back. The lemon juice is crucial for brightening the flavor. If the soup thickens too much upon storage, add extra broth or water when reheating.
