  • 2 cups your favorite salsa (medium or mild)
  • 4 cups low-sodium chicken broth
  • 15 oz canned black beans, drained and rinsed
  • 1 cup frozen corn
  • Optional toppings: fresh lime juice, chopped cilantro, diced avocado, shredded cheese, sour cream, crushed tortilla chips

Instructions

  1. Place the chicken breasts in a single layer at the bottom of a 6-quart slow cooker.
  2. Pour the 2 cups of salsa directly over the chicken, spreading it around so the chicken is mostly covered.
  3. Add the 4 cups of low-sodium chicken broth around the edges, being careful not to wash all the salsa off the chicken.
  4. Sprinkle the drained black beans and frozen corn evenly over everything.
  5. Cook on low for 6-8 hours or on high for 3-4 hours. Do not lift the lid during cooking.
  6. Once cooking time is up, carefully remove the chicken breasts to a cutting board. Use two forks to shred them into bite-sized pieces.
  7. Return the shredded chicken to the pot and stir everything together gently. Taste and adjust seasoning if needed (a pinch of salt, dash of cumin, or squeeze of fresh lime juice).
  8. Serve hot with your favorite toppings.

For best results, use a good quality salsa with visible chunks. If using frozen chicken, add an extra hour to cooking time on low. Ensure chicken reaches 165°F before shredding. For a creamier version, stir in 4 oz cream cheese or 1/2 cup heavy cream during the last 30 minutes. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
