  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • Salt and freshly ground black pepper, to season
  • 1 tablespoon olive oil
  • 8 oz cremini or button mushrooms, finely chopped
  • 3 tablespoons unsalted butter, softened
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • ½ cup shredded mozzarella cheese (optional)
  • Fresh parsley, chopped, for garnish
  • Optional: ¼ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add finely chopped mushrooms and thyme to the pan. Cook for 6–8 minutes, stirring occasionally, until mushrooms release moisture and turn golden brown. Season with salt and pepper.
  4. Remove skillet from heat and transfer mushroom mixture to a bowl. Stir in remaining 1 tablespoon softened butter and shredded mozzarella cheese (if using). Mix and set aside to cool slightly.
  5. Using a sharp knife, carefully slice a pocket into the side of each chicken breast about ¾ of the way through, without cutting all the way through.
  6. Season both sides of each chicken breast generously with salt and pepper.
  7. Stuff each chicken breast evenly with the garlic butter mushroom mixture. Secure openings with toothpicks or kitchen twine.
  8. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken breasts for 3–4 minutes on each side until golden brown.
  9. Transfer skillet or chicken to an oven-safe baking dish and bake for 15–20 minutes, or until internal temperature reaches 165°F (74°C).
  10. Remove chicken from oven and let rest for 5 minutes before slicing.
  11. Garnish with fresh parsley and optional red pepper flakes. Serve warm.

Use a meat thermometer to ensure chicken reaches 165°F for perfect doneness. Let chicken rest after baking to keep it juicy. Finely chop mushrooms to prevent filling from falling out.
