Cozy Hearty Sicilian Chicken Soup

A soul-warming, hearty Sicilian chicken soup featuring tender chicken, rustic herbs, and a bright touch of lemon zest. Perfect for cozy nights and easy to prepare in about 45 minutes.

  • pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 3 tablespoons extra virgin olive oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 large russet potato, peeled and cubed
  • 6 cups low sodium chicken broth
  • 1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried)
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Optional: ½ cup small pasta like ditalini or orzo

Instructions

  1. Chop the onion, carrots, celery, and potato into roughly ½-inch pieces. Mince the garlic finely and zest the lemon, setting it aside. Cut the chicken into bite-sized pieces about 1-inch cubes.
  2. Heat 3 tablespoons olive oil in a large heavy-bottomed pot over medium heat. Add the onion, carrot, and celery. Cook gently, stirring occasionally, until softened and translucent, about 7 minutes. Add the garlic in the last minute, stirring to release its aroma without burning.
  3. Push the vegetables to the side and add the chicken pieces. Brown lightly on all sides, about 5 minutes, stirring occasionally.
  4. Add the cubed potato, rosemary, and oregano. Stir to combine all ingredients well.
  5. Pour in 6 cups of chicken broth. Bring the soup to a boil, then reduce to a gentle simmer. Partially cover and cook for 25 minutes until potatoes and chicken are tender.
  6. If using pasta, cook it separately according to package instructions until al dente. Drain and set aside.
  7. Season the soup with salt and pepper to taste. Stir in the lemon zest just before serving. If using pasta, add it now and warm through for 2 minutes.
  8. Ladle hot into bowls and optionally garnish with fresh parsley or grated Parmesan.

Notes

Do not skip the lemon zest as it adds brightness to the soup. Brown the chicken for richer flavor and simmer gently to keep chicken tender. Cook pasta separately to avoid sogginess and add just before serving. Use low sodium broth to control saltiness. Optional additions include fresh parsley, grated Parmesan, or a splash of white wine or chicken bouillon to enhance flavor.
