A quick and hearty one-skillet dinner featuring thick-cut Irish bacon and crispy potatoes, perfect for busy nights or cozy meals.

  • 1.5 pounds Yukon Gold potatoes, peeled or unpeeled, diced into 1-inch cubes
  • 6 ounces thick-cut Irish bacon, chopped into bite-sized pieces
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cup chicken broth or water

Instructions

  1. Prep your ingredients: peel (optional) and dice potatoes, chop bacon, dice onion, and mince garlic.
  2. Heat skillet over medium heat and cook bacon until it starts to crisp and releases fat, about 5-7 minutes.
  3. Add diced onion and sauté until translucent, about 3 minutes. Add minced garlic and cook for 30 seconds.
  4. Add potatoes to skillet and stir to coat in bacon fat. Season with salt, pepper, and smoked paprika.
  5. Pour in chicken broth or water and cover skillet with lid or foil. Steam potatoes until tender, about 15 minutes, stirring occasionally.
  6. Remove lid, increase heat to medium-high, and cook uncovered for 8-10 minutes to crisp potatoes, stirring gently but less frequently.
  7. Stir in butter and fresh parsley. Adjust seasoning to taste and serve hot directly from the skillet.

Notes

Keep heat moderate during crisping to avoid burning. Add a splash of broth or oil if pan gets too dry. Peeling potatoes is optional but leaving skins adds texture and nutrients. For vegetarian version, substitute bacon with smoked paprika-seasoned mushrooms or tempeh and use vegan butter.
