A comforting pudding with a subtle savory twist from sautéed apples, perfect for cozy nights and quick dessert fixes.

Ingredients

Scale
  • 1 cup whole milk (240 ml), room temperature
  • 3 large eggs, room temperature
  • ¾ cup granulated sugar (150 g)
  • ½ cup all-purpose flour (65 g), sifted
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 medium apples (about 1 lb/450 g), peeled, cored, and sliced thinly (preferably Granny Smith)
  • 1 tbsp unsalted butter
  • 1 tbsp brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg (optional)
  • ½ tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your baking dish with butter or non-stick spray.
  2. Prepare the apple topping: In a medium skillet, melt 1 tbsp unsalted butter over medium heat. Add the sliced apples, sprinkle with brown sugar, cinnamon, nutmeg, and sea salt. Sauté for 5-7 minutes until apples soften slightly but still hold their shape.
  3. Mix the pudding batter: In a large bowl, whisk together the eggs and granulated sugar until pale and slightly thickened, about 2-3 minutes.
  4. Slowly add the milk and vanilla extract to the egg mixture, whisking gently to combine.
  5. Gradually sift in the flour and salt, folding carefully until the batter is smooth and lump-free. Avoid over-mixing.
  6. Pour the batter into the prepared baking dish. Evenly spread the sautéed apple slices over the top without stirring.
  7. Bake for 35-40 minutes until the pudding puffs up and turns golden brown. A toothpick inserted near the center should come out clean.
  8. Let the pudding rest for 5 minutes before serving.

Notes

Use room temperature eggs and milk for better batter texture. Avoid over-sautéing apples to keep a tender bite. Tent with foil if pudding browns too fast. For dairy-free, substitute milk and butter with plant-based alternatives. For gluten-free, use almond flour instead of all-purpose flour.
