A simple, comforting slow cooker side dish featuring potatoes infused with Lipton onion soup mix, perfect for fall and easy weeknight meals.

  • 3 pounds red or Yukon gold potatoes, scrubbed and halved or quartered
  • 1 envelope Lipton Onion Soup Mix (about 1 ounce or 28 grams)
  • 4 tablespoons unsalted butter, cut into small pieces
  • 1 1/2 cups water (360 ml)
  • 2 cloves fresh garlic, minced (optional)
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Wash the potatoes thoroughly and cut into halves or quarters about 1 to 1.5 inches in size.
  2. In the slow cooker, add the potatoes, Lipton onion soup mix, and minced garlic. Toss gently to coat evenly.
  3. Scatter the butter pieces on top of the potatoes.
  4. Pour 1 1/2 cups water around the edges of the slow cooker; do not stir after adding water.
  5. Cover and cook on low for 5 to 6 hours until potatoes are tender but hold their shape. Alternatively, cook on high for 3 to 4 hours, checking for doneness earlier.
  6. After cooking, carefully stir the potatoes and season with freshly ground black pepper or salt if needed.
  7. Sprinkle chopped fresh parsley over the top and serve warm.

Notes

Use Yukon gold potatoes for buttery texture or red potatoes for firmer pieces. For dairy-free, substitute butter with olive oil or vegan margarine. Avoid stirring during cooking to prevent mushy potatoes. If potatoes are watery after cooking, cook uncovered on high for 15-20 minutes to thicken. Fresh parsley adds a bright finish. Can be adapted for Instant Pot or oven baking.
