A quick and easy creamy bacon broccoli salad that comes together in under 15 minutes. Perfect for busy weeknights, potlucks, and barbecues, this crowd-pleaser features crunchy broccoli, crispy bacon, sharp cheddar, and a tangy homemade dressing.

Ingredients

Scale
  • 4 cups fresh broccoli crowns, chopped into bite-sized florets (about 2 large heads)
  • 8 slices cooked bacon, crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup red onion, finely diced
  • 1/4 cup sunflower seeds or sliced almonds (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the bacon (if needed): Place 8 slices of bacon on a parchment-lined sheet pan. Bake at 400°F for 15-18 minutes until crispy. Let cool on a paper towel-lined plate, then crumble into small pieces. Alternatively, cook in a skillet over medium heat for 8-10 minutes, flipping halfway.
  2. Prep the broccoli: Wash and thoroughly dry 4 cups of broccoli florets. Pat dry with a clean kitchen towel. Chop into bite-sized pieces, including peeled stems if desired.
  3. Make the dressing: In a small bowl, whisk together 1/2 cup mayonnaise, 1/4 cup sour cream, 2 tablespoons apple cider vinegar, 1 tablespoon sugar, 1/2 teaspoon salt, and 1/2 teaspoon black pepper until smooth and creamy. Taste and adjust seasoning.
  4. Combine the salad: In a large mixing bowl, add the chopped broccoli, crumbled bacon, 1 cup shredded cheddar cheese, and 1/4 cup diced red onion. Pour the dressing over the top and toss gently until everything is evenly coated.
  5. Chill (optional but recommended): Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Add the crunch (just before serving): Sprinkle 1/4 cup sunflower seeds or sliced almonds on top right before serving. Give everything one final toss and serve cold.

Notes

Dry broccoli thoroughly to prevent watery dressing. Let salad rest in fridge for 30 minutes for best flavor. Add crunchy toppings just before serving. Start with 3/4 of dressing and add more as needed to avoid overdressing.
