  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced or grated
  • Salt and black pepper to taste
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1/4 cup feta cheese, crumbled
  • Optional: 1/4 cup Kalamata olives, sliced
  • Optional: 1/2 avocado, diced

Instructions

  1. Drain and rinse the chickpeas. Transfer to a large bowl and mash lightly with a fork or potato masher, leaving about half whole.
  2. Dice the cucumber and red onion. If using regular cucumber, peel first. Soak diced onion in cold water for 5 minutes if desired, then drain.
  3. In a small bowl or jar, whisk together Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper until smooth. Adjust seasoning to taste.
  4. Add diced cucumber, red onion, and parsley to the bowl with chickpeas. Pour dressing over and fold gently until evenly coated.
  5. Taste and adjust seasoning with more salt, lemon, or pepper as needed. Fold in any optional add-ins if using.
  6. For best flavor, refrigerate for at least 15-20 minutes before serving. Serve chilled or at room temperature.

Notes

For meal prep, store dressing separately and mix just before serving to prevent sogginess. Add fresh herbs right before serving to keep color bright. Resting time enhances flavor.
