  • Celery sticks (optional, for serving)
  • Crackers or tortilla chips (for serving)

Instructions

  1. Gather and prep your ingredients: shred the cooked chicken finely (about 2 cups or 280 grams). Soften the cream cheese by leaving it at room temperature for 15-20 minutes or microwaving for 10 seconds.
  2. In a mixing bowl, combine the softened cream cheese, 1/2 cup buffalo hot sauce, and 1/2 cup ranch dressing. Use a hand mixer or spoon to blend until smooth and creamy, about 2-3 minutes.
  3. Fold in the shredded chicken and 1 cup shredded cheddar cheese. Stir gently but thoroughly to incorporate without breaking up the chicken, about 1-2 minutes.
  4. Mix in 2 tablespoons chopped green onions. Taste and adjust seasoning if needed.
  5. Cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes, ideally 1 hour, to let flavors meld and firm up the dip.
  6. Serve chilled or at room temperature in a serving bowl surrounded by celery sticks, crackers, or tortilla chips.

Do not overdo liquids to avoid a runny dip. Soften cream cheese before mixing for smooth texture. Chill dip for at least 30 minutes to meld flavors and firm up. If too thick after chilling, stir in a tablespoon of ranch or buffalo sauce. Can be made ahead and tastes better after resting. For dairy-free, use vegan cream cheese and dairy-free ranch.
