  • 1/2 cup (120ml) mayonnaise
  • 1/4 cup (60ml) Greek yogurt (can substitute dairy-free coconut yogurt)
  • 2 tablespoons mango chutney
  • 1 teaspoon curry powder (mild or medium heat)
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste
  • 2 tablespoons sultanas or golden raisins (optional)
  • 2 tablespoons toasted flaked almonds (optional, skip if nut allergies)
  • A handful fresh coriander or parsley, finely chopped

Instructions

  1. If not already cooked, poach chicken breasts in simmering water for 12-15 minutes until internal temperature reaches 165°F (74°C). Let cool, then shred or dice into bite-sized pieces.
  2. In a mixing bowl, combine mayonnaise, Greek yogurt, mango chutney, curry powder, and lemon juice. Stir until smooth and creamy.
  3. Season the mixture with salt and pepper to taste, starting with 1/4 teaspoon salt and a few grinds of pepper.
  4. If using, stir in sultanas or golden raisins for sweetness.
  5. Fold the shredded chicken gently into the creamy curry mixture, coating all pieces without mashing.
  6. Add toasted flaked almonds and chopped fresh coriander or parsley, mixing lightly.
  7. Cover and refrigerate for at least 30 minutes to let flavors meld and texture set. Serve chilled or at room temperature.

If mango chutney is chunky, mash or blend slightly before mixing to avoid uneven bites. Taste and adjust curry powder and lemon juice as needed.
