A creamy, tangy, and spicy buffalo chicken dip perfect for game day, made with simple keto-friendly ingredients and ready in under 30 minutes.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 280g), rotisserie chicken recommended
  • 8 ounces cream cheese (225g), softened
  • 1 cup shredded sharp cheddar cheese (100g)
  • 1/3 cup buffalo hot sauce (80ml), e.g., Frank’s RedHot
  • 1/4 cup ranch dressing (60ml), homemade or store-bought keto-friendly
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons chopped green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soften the cream cheese in a mixing bowl using an electric mixer or whisk until smooth and creamy.
  3. Add buffalo hot sauce and ranch dressing to the cream cheese and mix until fully incorporated.
  4. Sprinkle in garlic powder, onion powder, salt, and pepper; stir to combine.
  5. Fold in shredded chicken and shredded cheddar cheese gently, keeping some texture.
  6. Transfer the mixture to a greased 8×8 inch (20×20 cm) baking dish and smooth the top with a spatula.
  7. Bake for 20-25 minutes until edges bubble and top is lightly golden. Optionally broil for 2 minutes for extra browning, watching closely.
  8. Remove from oven and garnish with chopped green onions before serving.

Notes

Ensure cream cheese is softened well to avoid lumps. Use warm or room temperature shredded chicken for best texture. Adjust heat by varying buffalo sauce or adding cayenne. For dairy-free, substitute cream cheese and cheddar with plant-based alternatives and use vegan ranch dressing. Leftovers keep well refrigerated for up to 4 days or frozen for 2 months.
