A rich, velvety pasta dish with Italian sausage, sun-dried tomatoes, and Parmesan, ready in just 30 minutes. Perfect for weeknight dinners that feel special without the fuss.

  • 1 lb (450g) Italian sausage (mild or spicy), casings removed
  • 12 oz (340g) short pasta (rigatoni, penne, or fusilli)
  • 1 cup (240ml) heavy cream
  • ½ cup (120ml) low-sodium chicken broth
  • ⅓ cup (55g) oil-packed sun-dried tomatoes, drained and chopped
  • ½ cup (50g) freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • ½ medium yellow onion, diced
  • 2 tablespoons tomato paste
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley or basil, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil.
  2. While water heats, cook sausage in a large skillet over medium-high heat, breaking into crumbles, for 5-6 minutes until browned. Transfer to a plate, leaving 1 tablespoon fat in pan.
  3. Reduce heat to medium. Sauté onion for 2-3 minutes until softened. Add garlic and cook 30 seconds until fragrant. Stir in tomato paste and cook 1 minute.
  4. Pour in chicken broth, scraping up browned bits. Simmer 1 minute. Add heavy cream, sun-dried tomatoes, oregano, and red pepper flakes. Stir and bring to a gentle simmer.
  5. Cook pasta in boiling water until al dente (8-10 minutes). Reserve 1 cup pasta water before draining.
  6. Add cooked sausage and drained pasta to the skillet. Toss over low heat for 1-2 minutes until sauce thickens and coats pasta.
  7. Remove from heat. Stir in Parmesan until melted. Add reserved pasta water a splash at a time if sauce is too thick.
  8. Season with salt and pepper to taste. Garnish with parsley or basil. Serve immediately.

Notes

Reserve pasta water to adjust sauce consistency. Use freshly grated Parmesan for smooth melting. Don’t boil cream to prevent curdling. Leftovers keep 3 days in fridge; reheat with a splash of milk or broth.
