Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the mini potatoes thoroughly to ensure crisp skins.
  3. Toss the potatoes in olive oil, salt, and pepper until evenly coated.
  4. Spread the potatoes on a rimmed baking sheet in a single layer without overcrowding.
  5. Roast for 25-30 minutes, turning halfway through, until skins are crisp and golden and potatoes are tender.
  6. Remove from oven and let cool slightly until safe to handle.
  7. Slice each potato in half lengthwise.
  8. Using a small spoon or melon baller, gently scoop out the insides into a mixing bowl, leaving a thin shell intact.
  9. Mix the scooped potato with butter, cream cheese, garlic powder, salt, pepper, and chives until smooth and creamy. Fold in cheddar cheese if using.
  10. Spoon the creamy filling back into the potato skins, piling it high.
  11. Return the stuffed potatoes to the oven for 10-12 minutes to reheat filling and crisp skins further.
