  • 1 cup (100 grams) shredded sharp cheddar cheese
  • 1/4 cup (60 ml) mayonnaise
  • 1 teaspoon ranch seasoning mix (or 1 tablespoon ranch dressing)
  • 1/2 teaspoon garlic powder
  • 2 stalks green onions, thinly sliced
  • Optional: blue cheese crumbles for topping

Instructions

  1. Prep your chicken: shred about 2 cups (280 grams) of cooked chicken, discarding skin and bones. If cooking your own, poach 2 boneless chicken breasts in simmering water for 15 minutes, then shred once cooled.
  2. Soften the cream cheese by letting it sit at room temperature for 20-30 minutes or microwave for 15 seconds gently.
  3. Heat a 10-inch nonstick skillet over medium heat. Add the softened cream cheese and mayonnaise, stirring gently to melt together for about 2 minutes.
  4. Pour in 1/2 cup buffalo sauce and stir until completely combined and smooth.
  5. Add shredded chicken, shredded cheddar cheese, ranch seasoning, and garlic powder. Stir continuously to blend all ingredients.
  6. Cook for 3-4 minutes, stirring often, until cheese melts and dip is bubbling gently. Avoid high heat to prevent burning.
  7. Stir in sliced green onions, reserving some for garnish if desired.
  8. Optional: sprinkle blue cheese crumbles on top.
  9. Serve immediately warm, either from the skillet or transferred to a serving bowl.

Notes

Use softened cream cheese for smooth texture. Stir frequently on medium-low heat to avoid burning. Freshly shredded cheddar melts better than pre-shredded. Adjust buffalo sauce for desired spice level. Add a splash of milk or extra buffalo sauce if dip becomes too thick.
