  • 1/2 cup (130g) ube halaya (purple yam jam)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Grease a 9×13-inch pan with butter or line it with parchment paper and set aside.
  2. In a large saucepan over low heat, melt 1/4 cup (56g) unsalted butter, about 2-3 minutes, being careful not to brown or burn it.
  3. Add 4 cups (about 240g) mini marshmallows and stir constantly until fully melted and smooth, about 5 minutes, keeping heat low to avoid scorching.
  4. Stir in 1/2 cup (130g) ube halaya and 1 teaspoon vanilla extract until the mixture turns a vibrant purple and is well combined. Warm gently if mixture thickens too much.
  5. Add a pinch of salt and stir well to balance sweetness and enhance flavor.
  6. Remove the pan from heat and immediately add 6 cups (about 180g) Rice Krispies cereal. Fold gently but thoroughly to coat every crisp with the creamy ube marshmallow mixture.
  7. Transfer the mixture to the prepared pan and press evenly and firmly using a buttered spatula or wax paper, avoiding pressing too hard to keep treats light and crispy.
  8. Let the treats cool at room temperature for about 1 hour or until firm. Refrigerate to speed up setting if desired.
  9. Slice into squares or fun shapes and enjoy fresh.

Notes

Keep heat low when melting marshmallows to avoid scorching. Fold cereal gently to maintain crispness. Press mixture firmly but not too hard. Use a sharp knife wiped clean between cuts for neat slices. For vegan version, substitute butter with coconut oil and use vegan marshmallows. Ube halaya brand Marca Piña is recommended. Fresh or frozen ube can be used but requires extra prep. Store treats in airtight container at room temperature for up to 3 days or freeze for up to a month.
