  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter

Instructions

  1. Peel and dice 2 pounds (900 grams) of Yukon Gold potatoes into roughly 1-inch cubes.
  2. Pour 4 cups (950 ml) of chicken or vegetable broth into a large pot and bring to a gentle boil over medium-high heat.
  3. Add the diced potatoes to the boiling broth. Reduce heat to medium-low and simmer for 15-20 minutes until potatoes are fork-tender.
  4. Remove pot from heat. Mash some potatoes with a potato masher or blend with an immersion blender until desired consistency is reached.
  5. Stir in 4 tablespoons (60 grams) of unsalted butter until melted and incorporated, then add 1 cup (240 ml) of heavy cream and stir gently.
  6. Return pot to low heat and warm through for about 5 minutes, stirring occasionally. Do not boil.
  7. Ladle soup into bowls and serve immediately. Optional: garnish with chopped green onions, crispy bacon bits, or shredded cheese.

Notes

If soup is too thick after resting, stir in a splash of broth or water to loosen. If too thin, simmer uncovered to reduce and thicken. Peeling potatoes is optional for a rustic texture. Use low-sodium broth to control saltiness. For dairy-free, substitute butter and cream with olive oil and coconut milk.
