Instructions

  1. Cut the angel food cake into 2-inch (5 cm) bite-sized cubes and set aside.
  2. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C) to a depth of about 2 inches (5 cm).
  3. In a medium bowl, mix 1 cup granulated sugar with 2 tablespoons ground cinnamon. Melt 1/4 cup unsalted butter in a small bowl.
  4. Carefully place a few angel cake cubes into the hot oil without overcrowding. Fry for 1 to 2 minutes, turning occasionally, until golden and crisp on all sides.
  5. Remove the fried bites with a slotted spoon and drain on paper towels for about 1 minute.
  6. While still warm, brush each bite lightly with melted butter, then toss in the cinnamon sugar mixture until fully coated.
  7. Repeat frying and coating with remaining cubes, maintaining oil temperature.
  8. Serve warm immediately with optional dipping sauces.

Keep oil temperature steady at 350°F (175°C) to avoid greasy or burnt bites. Fry in small batches to maintain temperature. Use fresh angel food cake for best texture. Brush bites with butter while warm to help cinnamon sugar stick. For a lighter version, bake at 400°F (200°C) for 10-12 minutes, flipping halfway.
