  • 1/2 cup (120ml) basil pesto
  • 1 teaspoon baking powder (aluminum-free)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • Fresh basil leaves (for garnish, optional)
  • Grated Parmesan cheese (for garnish, optional)
  • Lemon juice (for serving, optional)

Instructions

  1. Preheat oven to 425°F (220°C). Place oven rack in the upper third. Line a baking sheet with foil, place a wire rack on top, and spray lightly with cooking spray.
  2. Pat chicken wings completely dry with paper towels. Place in a large bowl.
  3. In a small bowl, mix baking powder, salt, pepper, and garlic powder. Sprinkle over wings and toss with hands until evenly coated.
  4. Arrange wings in a single layer on the wire rack, not touching. Bake for 20 minutes.
  5. Flip wings with tongs and bake for another 15 minutes until golden brown and skin is crackly.
  6. Place pesto in a large clean bowl. Transfer hot wings to the bowl and toss gently until fully coated.
  7. Return pesto-coated wings to the wire rack in a single layer. Bake for 5-7 more minutes until pesto is set and slightly caramelized.
  8. Remove from oven, let rest 2 minutes, then transfer to a serving platter. Garnish with fresh basil and Parmesan if desired. Serve hot.

Notes

Pat wings very dry for maximum crispiness. Use aluminum-free baking powder to avoid metallic taste. For extra crispy skin, refrigerate wings uncovered for 1 hour before cooking. If wings brown too quickly, reduce oven temperature to 400°F (200°C). Work in batches if cooking for a crowd to avoid overcrowding.
