  • 2 cups shredded cooked chicken (about 280g)
  • 8 oz cream cheese, softened (225g)
  • 1/2 cup buffalo sauce (120ml)
  • 1 cup shredded cheddar cheese (100g)
  • 2 tablespoons finely chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup all-purpose flour (120g)
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs (150g)
  • Optional: 1/4 cup blue cheese crumbles (30g)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine shredded chicken, softened cream cheese, buffalo sauce, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy. Fold in blue cheese crumbles if using.
  3. Using a small cookie scoop or spoon, scoop about 1 1/2 tablespoons (approximately 30 grams) of the mixture and roll into a ball. Place balls on a tray or plate. This should make roughly 20 balls.
  4. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  5. Roll each ball in flour, shaking off excess, then dip into beaten eggs, allowing excess to drip off. Finally, coat evenly with panko breadcrumbs. Place coated balls on the prepared baking sheet.
  6. Bake for 15-18 minutes, flipping halfway through, until golden brown and crispy. The inside should be hot and bubbly.
  7. Let the balls cool for a few minutes before serving. Serve warm with ranch or blue cheese dressing.

Notes

For extra crispiness, spray the balls lightly with cooking spray before baking or air fry at 375°F (190°C) for 12-15 minutes, shaking halfway through. If the mixture is too soft to shape, chill for 15 minutes. Do not overcrowd the baking sheet to ensure even crisping. Use gluten-free flour and breadcrumbs for a gluten-free version. Blue cheese crumbles can be added for classic buffalo flavor. Leftovers store well in the fridge for up to 3 days and reheat best in oven or air fryer to maintain crispiness.
