Crispy Feta Rolls with Hot Honey

These crispy feta rolls are golden, flaky pastries filled with tangy feta cheese and drizzled with a sweet and spicy hot honey. Quick and easy to make, they are perfect for entertaining and a crowd-pleasing appetizer.

  • 810 phyllo dough sheets, thawed
  • 8 ounces (225 grams) feta cheese, crumbled
  • 6 tablespoons (85 grams) unsalted butter, melted
  • 2 tablespoons fresh parsley, finely chopped (optional)
  • Black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/3 cup (110 ml) honey
  • 1/2 to 1 teaspoon red chili flakes, adjust to taste
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, gently crumble the feta cheese. Add parsley, black pepper, and garlic powder. Mix to combine without breaking up the feta too much. Set aside.
  3. Carefully unroll the thawed phyllo dough on a clean surface. Cover with a slightly damp kitchen towel to prevent drying.
  4. Brush the first phyllo sheet lightly with melted butter. Lay a second sheet on top and brush with butter. Repeat until you have 3-4 layers stacked and brushed.
  5. Cut the stacked phyllo sheets into strips about 3 inches (7.5 cm) wide.
  6. Place about 1 tablespoon of the feta mixture near one end of each strip. Fold the sides inward slightly, then roll tightly to enclose the filling.
  7. Place each roll seam-side down on the prepared baking sheet. Brush the tops with additional melted butter.
  8. Bake for 18-22 minutes, or until deep golden brown and crisp. Watch closely near the end to avoid burning.
  9. While baking, warm the honey gently until runny but not boiling. Stir in red chili flakes and lemon juice. Adjust heat level as desired.
  10. Let the rolls cool for 5 minutes on a rack. Drizzle the warm hot honey generously over the rolls before serving.

Notes

Keep phyllo sheets covered with a damp towel to prevent drying. Brush each layer thoroughly with butter for crispiness. Roll tightly to avoid bursting. Watch baking time closely to prevent burning. Warm honey gently and add chili flakes slowly to control heat. Rolls can be assembled ahead and refrigerated up to 24 hours before baking.
