  • 1 lb fresh shrimp, peeled, deveined, and roughly chopped
  • 12 squares white bread, crusts removed
  • 2 stalks green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp grated ginger (optional)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 large egg, beaten
  • 1/4 cup panko breadcrumbs (about 30 g)
  • 1 tbsp toasted sesame seeds
  • Vegetable or canola oil for frying
  • Pinch of chili flakes (optional)

Instructions

  1. Prepare the shrimp mixture by combining chopped shrimp, green onions, garlic, ginger, soy sauce, sesame oil, beaten egg, panko breadcrumbs, and chili flakes if using in a mixing bowl. Mix gently until evenly combined.
  2. Slice the white bread into 12 squares, removing crusts. Lightly toast the bread until dry and firm but not browned.
  3. Spoon about one tablespoon of the shrimp mixture onto each bread square and spread evenly. Sprinkle toasted sesame seeds on top.
  4. Pour about 1/4 inch of vegetable oil into a skillet and heat over medium heat until hot (test by dropping a bit of shrimp mixture in; it should sizzle).
  5. Fry 3-4 shrimp toast bites at a time, shrimp side down first, for 2-3 minutes until golden and crispy. Flip and cook the bread side for another 2-3 minutes until golden brown.
  6. Drain the fried bites on paper towels and serve warm.

Notes

If the shrimp mixture isn’t sticking well, add more egg or press firmly onto the bread before frying. Fry in batches to avoid overcrowding and maintain oil temperature. For a lighter option, bake at 400°F for 12-15 minutes, flipping halfway through. Use slightly stale bread for a crunchier base. Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat in an oven or toaster oven to maintain crispness.
