A quick and easy comfort food recipe combining crispy garlic bread topped with warm, saucy spaghetti and melted cheese for a satisfying snack or casual meal.

Ingredients

Scale
  • 68 slices rustic Italian or French baguette, about ½ inch thick (day-old works best)
  • Cooked spaghetti, al dente, tossed lightly in marinara or spaghetti sauce (leftover spaghetti preferred)
  • ½ cup (115g) unsalted butter, softened
  • 3 cloves garlic, freshly minced
  • 1 teaspoon Italian seasoning (blend of dried oregano, basil, and thyme)
  • 2 tablespoons (15g) freshly grated Parmesan cheese
  • ¼ cup (28g) shredded mozzarella cheese
  • Red pepper flakes (optional, for a subtle spicy kick)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. In a mixing bowl, combine ½ cup softened unsalted butter with 3 cloves minced garlic and 1 teaspoon Italian seasoning. Mix well until fragrant.
  3. Lay out 6-8 slices of rustic bread on the baking sheet. Spread a generous layer of garlic butter on each slice, covering the edges.
  4. Bake the slices for 8-10 minutes until golden and crisp around the edges but still soft inside. Watch carefully to avoid burning.
  5. Warm the spaghetti gently in a skillet with a splash of marinara sauce so it is moist but not watery.
  6. Spoon a layer of warm spaghetti evenly over each toasted bread slice. Sprinkle each with ¼ cup shredded mozzarella and 2 tablespoons grated Parmesan cheese.
  7. Return the baking sheet to the oven and bake for another 7-9 minutes, or until the cheese melts and bubbles with a slight golden crust.
  8. Remove from oven and garnish with chopped fresh parsley and optional red pepper flakes.

Notes

Use day-old bread for best texture to avoid sogginess. Soften butter before mixing for easy spreading. Warm spaghetti before topping to keep butter from cooling and cheese melting properly. For extra crispness, broil for last 1-2 minutes watching carefully. Use thick, toasted bread and thick sauce to prevent soggy bread. Leftovers can be refrigerated for up to 2 days and reheated in oven or toaster oven for best texture.
