  • 2 large eggs, room temperature
  • ¾ cup (180 ml) whole milk
  • 1 teaspoon vanilla extract
  • ½ cup (120 ml) honey, preferably raw or wildflower
  • About 2 cups (480 ml) vegetable oil for frying
  • Powdered sugar for dusting (optional)

Instructions

  1. In a medium bowl, whisk together flour, baking powder, sugar, salt, and cinnamon until evenly combined.
  2. In a separate bowl, beat eggs until light and frothy. Stir in milk and vanilla extract until blended.
  3. Gradually add dry ingredients into wet ingredients, folding gently with a spatula until just combined. Batter should be thick but smooth with some small lumps; do not overmix.
  4. Pour vegetable oil into a heavy-bottomed skillet or deep frying pan and heat over medium-high until oil reaches 350°F–375°F (175°C–190°C).
  5. Using two spoons or a small ice cream scoop, drop tablespoon-sized dollops of batter into hot oil, frying in batches of 4–5 to avoid overcrowding.
  6. Fry each fritter for about 2–3 minutes per side until golden and crisp. Flip carefully to brown evenly.
  7. Transfer cooked fritters to a wire rack set over paper towels to drain excess oil and keep crisp.
  8. Warm honey slightly until it flows easily, then drizzle generously over warm fritters or serve on the side for dipping.
  9. Optionally, dust fritters with powdered sugar and a sprinkle of cinnamon before serving.

Maintain oil temperature between 350°F and 375°F to ensure fritters are crispy without absorbing too much oil. Do not overmix batter to keep fritters tender.
