  • 1 pound frozen straight-cut French fries
  • 2 tablespoons cornstarch
  • Vegetable oil or canola oil for frying
  • 2 tablespoons cheddar cheese powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • Optional: 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat vegetable or canola oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  2. Place frozen fries in a large bowl and sprinkle with cornstarch. Toss to coat evenly.
  3. Fry the fries in batches for 3-4 minutes until light golden but not fully cooked. Remove and drain on paper towels.
  4. Let fries rest for 5 minutes.
  5. In a small bowl, mix cheddar cheese powder, chili powder, smoked paprika, garlic powder, onion powder, salt, and optional cayenne pepper.
  6. Return fries to the hot oil and fry for another 2-3 minutes until crispy and golden brown. Drain on fresh paper towels.
  7. While fries are hot, sprinkle seasoning mixture over them and toss gently to coat evenly.
  8. Serve immediately with your favorite dips.

Notes

For extra crispiness, toss fries with a little extra cornstarch before seasoning. Avoid overcrowding the fryer to maintain oil temperature. Reheat leftovers in a hot oven at 400°F for 5-7 minutes to keep fries crispy. For a baked version, toss fries with oil and seasoning and bake at 425°F for 25-30 minutes, flipping halfway.
