  • 2 large English cucumbers (or 3 medium Persian cucumbers)
  • 1 pint cherry tomatoes (about 2 cups)
  • 1 medium red onion
  • 2 tablespoons fresh parsley (optional)
  • 1/4 cup apple cider vinegar
  • 3 tablespoons granulated sugar
  • 1/4 cup olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper (freshly ground)
  • 1/4 teaspoon garlic powder

Instructions

  1. Wash and prep your vegetables. Rinse the cucumbers and tomatoes under cool water. Pat them dry with a clean towel. Give the parsley a good wash too, if you’re using it.
  2. Slice the cucumbers. Cut off the ends of each cucumber, then slice them into thin rounds, about 1/4-inch thick. If using English cucumbers, leave the peel on.
  3. Halve the cherry tomatoes. Cut each tomato in half lengthwise. If tomatoes are larger, quarter them instead.
  4. Slice the red onion thinly. Cut the onion in half through the root end, peel off the papery skin, and slice each half into thin half-rings, about 1/8-inch thick.
  5. Chop the parsley. Gather the parsley leaves into a tight bundle and run your knife through them a few times.
  6. Make the dressing. In a small bowl or mason jar, combine the apple cider vinegar, sugar, olive oil, salt, pepper, and garlic powder. Whisk until the sugar is mostly dissolved, or shake in a jar.
  7. Combine everything. Add the sliced cucumbers, halved tomatoes, red onion, and parsley to a large mixing bowl. Pour the dressing over the top and gently toss to combine.
  8. Let it rest. Let the salad sit at room temperature for at least 10 minutes before serving.
  9. Give it one last stir. Right before serving, gently toss the salad. Taste and adjust seasoning if needed.
