Decadent No-Bake Turtle Lasagna

A cool, creamy, no-bake dessert with layers of buttery graham cracker crust, silky cream cheese, rich chocolate pudding, fluffy whipped topping, gooey caramel, and crunchy pecans. Ready in just 20 minutes of prep, it’s the perfect easy dessert for any occasion.

  • 2 cups graham cracker crumbs (about 14 full sheets, crushed fine)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (or 2 cups Cool Whip for shortcut)
  • 1 (3.9 oz) box instant chocolate pudding mix
  • 2 cups cold whole milk
  • 1 cup caramel sauce
  • 1 cup chopped pecans, toasted
  • 1 cup semi-sweet chocolate chips
  • 1 cup whipped topping (for top layer, plus extra for garnish)

Instructions

  1. Make the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until every crumb is moistened and the mixture looks like wet sand. Press firmly into the bottom of a 9×13 inch dish. Refrigerate while making the next layer.
  2. Make the cream cheese layer: In a large mixing bowl, beat softened cream cheese with an electric mixer until smooth and fluffy, about 2 minutes. Add powdered sugar and vanilla extract, beat until combined. In a separate bowl, whip heavy cream until stiff peaks form (3-4 minutes on high). Gently fold whipped cream into cream cheese mixture until just combined. Spread evenly over chilled crust.
  3. Make the chocolate pudding layer: In another bowl, whisk together instant chocolate pudding mix and cold milk for about 2 minutes until it starts to thicken. Let sit for 5 minutes to fully set. Gently spread pudding over cream cheese layer.
  4. Add the topping: Spread remaining whipped topping evenly over pudding layer. Drizzle caramel sauce in a zigzag pattern. Sprinkle toasted pecans and chocolate chips over the top.
  5. Chill and set: Cover dish with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight. The longer it chills, the cleaner the slices will be.

Notes

For best results, let cream cheese soften at room temperature for 30 minutes before starting. Toast pecans at 350°F for 5-7 minutes for deeper flavor. Warm caramel slightly (10-15 seconds in microwave) for easier drizzling. Use a sharp knife dipped in hot water and wiped dry between cuts for clean slices. Make ahead and chill overnight for best texture and flavor.
