  • 1 cup (227g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour
  • 1/4 tsp salt
  • 1 cup (220g) packed light brown sugar
  • 1/2 cup (113g) unsalted butter
  • 1/4 cup (60ml) heavy cream
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1 1/2 cups (260g) semi-sweet chocolate chips
  • 1 tbsp vegetable oil or coconut oil (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add salt and gradually mix in all-purpose flour until just combined. Press dough evenly into an 8×8-inch baking pan. Bake for 18-20 minutes until edges turn golden. Remove and let cool completely.
  2. In a medium saucepan over medium heat, combine brown sugar, butter, and heavy cream. Stir constantly and bring to a gentle boil. Simmer for about 5 minutes until thickened and amber-colored. Remove from heat, stir in vanilla extract and a pinch of salt. Pour caramel evenly over cooled crust and spread gently. Chill in fridge for about 30 minutes until set but soft.
  3. Melt chocolate chips with vegetable or coconut oil in microwave in 20-second intervals, stirring between, or use a double boiler. Pour melted chocolate over set caramel layer and spread evenly. Chill for at least 1 hour until chocolate is firm. Slice into bite-sized squares with a sharp knife. Keep refrigerated if not serving immediately.

Notes

Use softened butter (not melted) for the crust for best texture. Stir caramel constantly and keep heat moderate to avoid burning. Chill each layer fully before adding the next for clean layers and easier slicing. Use a sharp, warm knife dipped in hot water for clean cuts. For vegan or gluten-free versions, substitute ingredients accordingly. Store-bought caramel sauce can be used but fresh caramel is recommended for best flavor.
