Ingredients

Scale
  • 1 ½ lbs (680g) ground beef (80/20 preferred)
  • ½ cup (60g) breadcrumbs (plain or Italian-style)
  • 1 large egg
  • ¼ cup (60ml) milk (whole milk preferred)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper (freshly ground preferred)
  • 2 large yellow onions (thinly sliced)
  • 2 tablespoons (28g) butter
  • 2 tablespoons (16g) all-purpose flour
  • 1 ½ cups (355ml) beef broth (low-sodium preferred)
  • 1 can (10.5 oz / 298g) condensed cream of mushroom soup
  • 1 teaspoon fresh thyme (chopped, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Slice both onions into thin rings, about ¼-inch thick.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined. Divide into 6 equal portions and shape into oval patties, about ¾-inch thick. Set aside.
  3. Melt butter in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and golden brown, about 8-10 minutes.
  4. Sprinkle flour over the cooked onions and stir constantly for 1 minute. Slowly pour in beef broth while whisking continuously to prevent lumps. Simmer for 2 minutes until slightly thickened. Stir in cream of mushroom soup and fresh thyme (if using). Taste and adjust salt and pepper as needed.
  5. Arrange patties in a single layer in a 9×13-inch baking dish. Pour the onion gravy evenly over the top, ensuring each patty is coated.
  6. Bake uncovered for 35-40 minutes, until patties are cooked through and gravy is thick and bubbling. For deeper color, broil for the last 2 minutes.
  7. Let the dish rest for 5 minutes before serving. Serve over mashed potatoes, egg noodles, or with crusty bread.

Notes

Don’t skip caramelizing the onions—it adds deep sweetness to the gravy. Use your hands to mix patties gently to avoid toughness. Let the dish rest for 5 minutes before serving to allow gravy to thicken. For a gluten-free version, use gluten-free breadcrumbs and cornstarch slurry instead of flour. For a dairy-free version, use dairy-free butter and cream soup alternative.
