Easy Baked Blueberry Donuts with Vanilla Glaze

These fluffy baked blueberry donuts are topped with a sweet vanilla glaze and come together in under 30 minutes. No yeast, no frying, just a simple, delicious treat perfect for brunch or a quick dessert.

  • 1 ½ cups (180 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ¼ cup (60 ml) unsalted butter, melted
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120 ml) buttermilk
  • 1 cup (140 g) fresh or frozen blueberries (if frozen, do not thaw; toss in 1 tablespoon flour)
  • 1 cup (120 g) powdered sugar
  • 23 tablespoons (30–45 ml) milk
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 6-cavity donut pan generously with non-stick cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate medium bowl, whisk together melted butter, egg, vanilla extract, and buttermilk until smooth.
  4. Pour wet ingredients into dry ingredients. Stir gently with a rubber spatula just until combined (a few lumps are fine). Do not overmix.
  5. Gently fold in blueberries (if using frozen, toss with 1 tablespoon flour first). Fold only 3–4 times until distributed.
  6. Transfer batter to a piping bag or zip-top bag with a corner snipped off. Pipe batter into each donut cavity, filling about ¾ full.
  7. Bake for 9–11 minutes, until golden around edges and a toothpick inserted in center comes out clean.
  8. Let donuts cool in pan for 2–3 minutes, then turn out onto a wire rack. Cool completely before glazing.
  9. For the glaze: In a small bowl, whisk together powdered sugar, ½ teaspoon vanilla extract, and 2 tablespoons milk. Add a third tablespoon if a thinner glaze is desired.
  10. Dip tops of cooled donuts into glaze, let excess drip off, and place back on rack. Glaze will set in 10–15 minutes.

Notes

Do not overmix the batter; a few lumps are fine. Use room temperature ingredients for best texture. Cool donuts completely before glazing to prevent glaze from sliding off. If using frozen blueberries, do not thaw and toss in flour to prevent sinking.
