Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 12-cup mini muffin pan generously with non-stick cooking spray.
  2. Grind the oats: Add the rolled oats to a blender or food processor and pulse 8-10 times until they resemble a coarse flour. If using quick oats, skip this step.
  3. Mash the bananas: In a large bowl, mash the ripe bananas with a fork until mostly smooth with a few small lumps.
  4. Add the wet ingredients: Crack in the eggs, pour in the milk and vanilla extract. Whisk until well combined and slightly frothy.
  5. Add the dry ingredients: Stir in the ground oats, baking powder, cinnamon, and salt. Mix until just combined. The batter should be thick but scoopable.
  6. Fold in any mix-ins: Gently fold in chocolate chips, blueberries, or nuts if using.
  7. Fill the muffin cups: Use a small cookie scoop or spoon to divide the batter evenly among the 12 cups. Fill each cup about ¾ full.
  8. Bake for 8-10 minutes. The bites are done when the edges are golden brown and a toothpick inserted in the center comes out clean.
