This Easy Cowboy Caviar Salad is a fresh, tangy, no-cook side dish packed with beans, corn, and crunchy peppers. Perfect for gatherings, it comes together in minutes and gets even better as it sits.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 can (15 oz) corn, drained, or 1 ½ cups frozen corn, thawed
  • 1 medium red bell pepper, finely diced
  • 1 medium green bell pepper, finely diced
  • ½ medium red onion, finely diced
  • 1 small jalapeño, seeded and minced
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh lime juice
  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or agave
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Prep the beans and corn: Open the cans of black beans and black-eyed peas. Pour them into a colander and rinse thoroughly with cold water until the foam subsides. Let them drain well while you chop the vegetables. If using frozen corn, run it under warm water for a minute to thaw, then drain.
  2. Dice the vegetables: Chop the red and green bell peppers into small, uniform pieces—about ¼-inch dice works best. Finely dice the red onion. If the onion tastes too sharp, soak the diced pieces in a bowl of cold water for 10 minutes, then drain. Seed and mince the jalapeño. Be careful with your fingers—wash your hands immediately after handling the seeds.
  3. Chop the cilantro: Give the cilantro a rough chop, stems and all. The stems have tons of flavor, so do not toss them.
  4. Make the dressing: In a small bowl or a mason jar, combine the lime juice, olive oil, apple cider vinegar, honey, minced garlic, cumin, chili powder, salt, and pepper. Whisk vigorously or screw on the lid and shake until the dressing is emulsified and slightly thickened. Taste it—it should be tangy, a little sweet, and well-seasoned.
  5. Combine everything: In your large mixing bowl, add the drained beans, thawed corn, diced peppers, onion, jalapeño, and cilantro. Pour the dressing over the top.
  6. Mix gently: Use a rubber spatula or large spoon to fold everything together. Be gentle so you do not mash the beans. Make sure every piece is coated in that beautiful dressing.
  7. Let it rest: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. This step is not optional—the flavors need time to get friendly. If you can wait an hour or two, even better.
  8. Taste and adjust: Before serving, give it a stir and taste. Add more salt, lime juice, or a pinch of cayenne if you want more heat. Sometimes I add an extra drizzle of olive oil right before serving to freshen it up.
  9. Serve: Transfer to a serving bowl and surround with tortilla chips. Alternatively, spoon it over a bed of lettuce for a main dish salad, or serve alongside grilled chicken or fish.

Notes

Do not skip the resting time—flavors meld and improve. Drain beans well to avoid soggy salad. Cut vegetables uniformly for best texture. Use fresh lime juice for brightest flavor. Make ahead for best results; add avocado just before serving. Store in airtight container in fridge for up to 4 days. Not recommended for freezing.
