This easy chocolate cobbler creates a soft, cakey top and a rich, molten fudge sauce underneath using simple pantry ingredients and no mixer. It’s a warm, indulgent dessert that feels fancy but comes together with almost no effort.

  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (20g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) whole milk
  • 1/3 cup (75g) unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup (100g) granulated sugar (for topping)
  • 1/4 cup (20g) unsweetened cocoa powder (for topping)
  • 1 1/2 cups (355ml) boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or nonstick spray.
  2. In a medium mixing bowl, whisk together 1 cup all-purpose flour, 3/4 cup granulated sugar, 1/4 cup cocoa powder, 2 teaspoons baking powder, and 1/2 teaspoon salt until no lumps remain.
  3. Add 1/2 cup milk, 1/3 cup melted butter, and 1 1/2 teaspoons vanilla extract. Stir with a spatula or wooden spoon until just combined. The batter will be thick.
  4. Spread the batter evenly in the prepared baking dish.
  5. In a small bowl, stir together 1/2 cup granulated sugar and 1/4 cup cocoa powder. Sprinkle this mixture evenly over the batter.
  6. Carefully pour 1 1/2 cups of boiling water over the entire surface. Do not stir.
  7. Bake for 35-40 minutes, until the top is set and crackled and the edges are bubbling.
  8. Cool for 5-10 minutes before serving. Scoop deep to get both the cake and the sauce.

Notes

Don’t overmix the batter. Use boiling water, not hot tap water. Watch the baking time closely. Let the cobbler rest before serving. Use a metal or glass pan for best results. Double the recipe for a 9×13 pan and increase baking time by 10-15 minutes.
