Easy Fresh Zesty Mexican Cucumber Salad Recipe

A quick and refreshing cucumber salad with lime, chili, and cilantro that comes together in under 10 minutes. Perfect for hot days, barbecues, or as a light side dish.

  • 2 large English cucumbers, thinly sliced
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 jalapeño, seeded and finely diced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon chili powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Wash and dry the English cucumbers. Slice them into thin rounds, about 1/8-inch thick. Place the slices in a large mixing bowl.
  2. Thinly slice the red onion. For a milder flavor, soak the slices in a small bowl of cold water for 5 minutes, then drain and pat dry. Add to the cucumbers.
  3. In a small bowl or measuring cup, whisk together the fresh lime juice, lime zest, honey, olive oil, chili powder, salt, and black pepper. Taste and adjust honey or chili to preference.
  4. Add the diced jalapeño and chopped cilantro to the bowl with the cucumbers and onions. Pour the dressing over the top and toss gently until every slice is coated.
  5. Let the salad rest at room temperature for 5 to 10 minutes to allow flavors to meld.
  6. Give the salad a final toss before serving. Taste and adjust seasoning if needed.
  7. Serve immediately or chill. Best within 30 minutes of being dressed.

Notes

For best results, slice cucumbers thinly and let the salad rest for 5-10 minutes before serving. If making ahead, keep dressing separate and toss just before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days, but texture changes after the first day.
