  • 1/2 cup (113 g) unsalted butter, melted (salted butter optional)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (about 75 g) rainbow sprinkles (jimmies recommended)
  • Optional: 1/2 cup chocolate chips or white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together the melted butter, eggs, and vanilla extract until smooth and slightly frothy (about 2 minutes by hand or 1 minute with a mixer).
  3. Gradually add the entire box of vanilla cake mix to the wet ingredients. Stir with a spatula or mixer on low until just combined, avoiding overmixing.
  4. Gently fold in 1/2 cup of rainbow sprinkles and chocolate chips if using. The batter will be thick and slightly sticky.
  5. Transfer the mixture into the prepared baking pan. Spread evenly to about 1 inch (2.5 cm) thickness using an offset spatula or the back of a spoon.
  6. Bake for 22-26 minutes, starting to check at 20 minutes. Bars are done when edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Remove from oven and let cool completely in the pan on a wire rack for at least 30 minutes.
  8. Use the parchment paper overhang to lift bars out of the pan. Cut into 12-16 squares depending on desired serving size.
  9. Store leftovers in an airtight container at room temperature for up to 3 days.
