  • 1 pound ground turkey (lean)
  • 1/2 cup teriyaki sauce (120 ml)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 large bell pepper, thinly sliced (red or yellow)
  • 2 cups broccoli florets (about 150 g)
  • 2 stalks green onions, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice or noodles (optional, for serving)

Instructions

  1. Prepare your ingredients: mince the garlic, grate the ginger, slice the bell pepper thinly, and cut the broccoli into bite-sized florets. Cook rice or noodles if using.
  2. Heat a large skillet or wok over medium-high heat and add 1 tablespoon vegetable oil and 1 tablespoon sesame oil.
  3. Add the ground turkey to the skillet. Break it up into small crumbles and cook for 5-7 minutes until no longer pink, seasoning lightly with salt and pepper.
  4. Add the minced garlic and grated ginger. Stir and cook for 1-2 minutes until fragrant, being careful not to burn.
  5. Add the sliced bell peppers and broccoli florets. Stir-fry for 3-4 minutes until veggies are tender-crisp.
  6. Pour in the 1/2 cup teriyaki sauce and stir to coat the turkey and veggies evenly. Cook for another 2-3 minutes until the sauce thickens slightly.
  7. Remove from heat, sprinkle sliced green onions on top, stir quickly, and serve.

Notes

For gluten-free, use tamari instead of regular teriyaki sauce. To loosen thick sauce, add a splash of water or chicken broth. Avoid overcrowding the pan to get a nice caramelization on the turkey. Fresh ginger is preferred over powder for better flavor. Prep all ingredients before cooking as the process moves quickly.
