Easy Healthy Fudgy Banana Brownies

Rich, fudgy brownies made with ripe bananas and cocoa powder, naturally sweetened without refined sugar. A guilt-free dessert that tastes indulgent.

  • 3 ripe bananas (the spottier, the better)
  • 1/2 cup unsweetened cocoa powder (Dutch-processed preferred)
  • 1/2 cup oat flour
  • 2 large eggs (room temperature)
  • 1/4 cup melted coconut oil (or neutral oil like avocado oil)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips (70% cocoa, optional but recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray the paper with cooking spray.
  2. In a mixing bowl, mash the ripe bananas with a fork until mostly smooth (a few small lumps are fine). You should have about 1 to 1 1/4 cups of mashed banana.
  3. Add the eggs, melted coconut oil, and vanilla extract to the mashed bananas. Whisk until well combined and slightly frothy, about 30 seconds.
  4. In a small bowl, whisk together the cocoa powder, oat flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet mixture. Fold gently with a spatula until just combined. Do not overmix.
  6. Reserve about 1 tablespoon of chocolate chips for topping. Gently fold the remaining chocolate chips into the batter.
  7. Scoop the batter into the prepared pan and spread it evenly. Sprinkle the reserved chocolate chips on top.
  8. Bake for 20-25 minutes, until the edges are set and the center is slightly jiggly. A toothpick inserted in the center should come out with a few moist crumbs, not wet batter. Start checking at 20 minutes.
  9. Cool completely in the pan for at least 30 minutes before lifting out using the parchment overhang. For cleaner slices, refrigerate for an hour before cutting.
  10. Slice into 9-16 squares and enjoy.

Notes

Use very ripe (mostly brown/black) bananas for maximum sweetness. Do not overbake; brownies continue cooking from residual heat. For best results, cool completely before cutting. Brownies taste even better the next day. Store in an airtight container at room temperature for up to 3 days, or refrigerate. Freeze individually wrapped for up to 3 months.
